White Chocolate Raspberry Cookies

I don’t know about you but I love the taste of white chocolate and raspberries together. It’s heaven in my mouth. Except for one small problem. I don’t like raspberries. The seeds get stuck in my teeth and then I have to pick them out and I feel like Gramma from The Beverly Hillbillies. It’s not pretty. So I thought and thought and thought and came up with this amazingly fantastic idea. (Okay, to be honest I didn’t think about it much at all. I opened my cupboard and saw a box of Pop Tarts and bam, it hit me. Why not add Pop Tarts to cookies??? I mean, Pop Tarts rock. Cookies rock. Why not cram the two together. So I made these, white chocolate raspberry cookies. They look pretty good don’t they?!
Ingredients:
* one box of these bad boys (I used raspberry but you could use any fruit flavor. And, of course I used the ones with frosting. Is there any other kind???)
 

* white chocolate chips (I used half of the bag but you can use as much as you like.)
* 2 1/4 cups flour
* 1 teaspoon baking soda
* 1 teaspoon salt
* 1 cup butter, softened
* 3/4 cup brown sugar
* 3/4 cup sugar
* 1 teaspoon vanilla
* 2 large eggs

Preheat over to 325. (This is if you are using a muffin top pan. If you are not, preheat over to 375.)

* Combine flour, baking soda and salt in a small bowl. Set aside.
* Beat butter, sugar and brown sugar and vanilla until creamy. Add eggs, one at a time, beating well after each addition.
* Gradually beat in flour mixture.
* Stir in white chocolate chips.
* Then I crumbled up the pop tarts and folded them into the dough. Yum, right???

I cooked them in my muffin top pan because it is my new favorite way to make cookies. (Hopefully you didn’t miss my post here about it and the delicious chocolate chip s’more cookies.)

Bake for about 13 minutes but check often. If they are getting brown on the sides they are done. (I like chewy cookies.)

The Pop Tarts are delicious inside the cookies and the raspberry taste is heavenly.

Enjoy and try to not eat them all in one sitting… I dare you.

  41. I made these cookies this morning… I cut the recipe in half… although the cookies all burned, they were still very DELICIOUS! I do not have a muffin top pan, baked at 375 although I probably should have maybe baked at a lower temp… the first time I baked for the full 13 mins, the second about 10-11.. all burnt… the good thing is though they still taste great! The burnt factor sorta added flavor to the ‘candy’ aspect. My S/O loves white chocolate & raspberry cheesecake, and I was looking for an easy recipe with those two… this was so easy and SO delicious… made it for our anniversary and he loved them… me too!!! I WILL MAKE THEM AGAIN and play around with the timing… THANK YOU for such a great idea, we were thinking of all different combinations we could use… YUMMMMM!!!
