Taco Rice and Beans

I think I must be craving Mexican food. First there was the Touchdown Taco Dip and then the Taco Soup and now this… Taco Rice and Beans. Yum! Again, it has nothing to do with the fact that I can plop a big blop of sour cream on this =o)

I found this great recipe in one of those little cookbook pamphlet things you find in the grocery store checkout aisle. I think I’ve mentioned before that I have a weakness for them. This one is called Ortega Favorite Mexican Recipes. How could I not buy this one, right?

I changed it a little bit. Here’s my version…

Ingredients:
* 2 Tablespoons Olive Oil
* 1 medium onion, diced
* 1 cup water
* 1 packet Taco Seasoning Mix
* 1 can black beans, drained
* 2 cups cooked rice
* 1/4 cup Salsa
* 1 pound hamburger or ground turkey

Heat oil in skillet over medium heat until hot.
Add onion and hamburger (I used ground turkey). Cook and stir until browned.
Add water and seasoning mix. Cook and stir until combined and slightly thickened.
Stir in beans, rice and salsa.
Cook 5 minutes longer or until heated through.

Serve garnished with sour cream (of course) =o)

Feel free to add more ingredients also. You can omit the meat and have a vegetarian version. or wrap this in flour tortillas for a more hearty meal.

    I think my family would love this wrapped in tortillas. I make a similar burrito version throwing in leftover shredded chicken – one of those quick use of leftovers meals.

  18. This is the kind of thing my family would like, except for my littlest. The boys would roll it up in a tortilla and my hubby would smother it in cheese and peppers and eat it from a bowl! 🙂
