Cinnamon Roll Pancakes

We’ve been on a cinnamon roll kick lately. Can you ever get enough? I’m swaying towards “no way!” I think my kids would agree with me =o) But it’s a lot of work making homemade cinnamon rolls. Don’t get me wrong, they are fantastic. But sometimes I don’t have a couple of hours to spend in the kitchen (go figure.) So this is the perfect alternative… cinnamon roll pancakes! And they are so darn delicious!!! I think I saw this first on The Idea Room. But it might have been on Recipe Girl. I’m not sure.

They are easy to make (or you can make it more complicated. It’s up to you.) =o)

Here’s what you’ll need:
* Pancake mix (or you can make your own from scratch)
* 1/2 cup brown sugar
* 1 tsp. cinnamon
* 2 Tbsp. melted butter

Mix up the melted butter, brown sugar and cinnamon. You’ll need to put it in a squeeze bottle. (An empty Honey Bear works great.) If you need to thin it out a little with milk but you don’t want it too thin.

Make your pancake batter.

Pour batter on your griddle. Immediately swirl on some of the sugar mixture.


When bubbly, turn and cook as you any other pancake.

So what do you put on top of cinnamon roll pancakes??? I wanted cream cheese frosting. Because seriously, if you’re going to do it why not do it! My son wanted “regular” cinnamon roll frosting (of course) and my daughter wanted maple frosting (like we had on our cinnamon roll bites.) Heck, it’s summer time so I made all 3.

Cream cheese frosting:
* 1/4 cup butter, softened
* 4 oz. cream cheese, softened
* 1 1/2 tsp. milk
* 1/2 tsp. vanilla
* 1 1/2 cups powdered sugar

“Regular” cinnamon roll frosting:
* 1 1/2 cups powdered sugar
* 1/2 tsp. butter, melted
* 1/4 tsp. vanilla
* 1 tsp. 1 Tbsp. milk

Maple frosting:
* 1 1/2 Tbsp maple flavoring
* 4 cups powdered sugar
* 3 Tbsp. butter, softened
* 3/4 Tbsp. hot water

Frost and enjoy!

  18. I have failed at makeing cinnamon rolls so many times it is embarressing (cinnamon rolls and chocolate chip cookies are my nemisis!) I love this idea though!     This recipe did not work as stated. The brown sugar mixture was much too thick- it was crumbly. I looked up a few more recipes and they all called for much more butter than 1 tablespoon. When I made that adjustment they were delicious the brown sugar mixture thinned out and I was able to use it as the recipe stated. I made a similar cream cheese topping recipe that I had and they were delicious. This is a great concept, the butter amount was just off.

  42. I’ll have to agree with anonymous. 🙂 The brown sugar mix was far too thick. But I just added milk like it was suggested and it thinned out just fine. I didn’t have a squeeze bottle so I just used a sandwich baggie and cut a hole and squeezed. I had to work on the size of the hole a bit, at first too small, then too large (oops) but it worked out just fine in the end. 😉 Still got the mix on the pancakes and the fam loved them. Since we LOVE cinnamon in our family I may up the amount of cinnamon in our next batch. Thanks so much for sharing this is going to be a new family favorite in our house. 🙂

  49. Found you on Pinterest. :)I made these today and I had the same problem as another person. I had little ‘tracks’ where the cinnamon mixture was swirled. It looked like a little ant farm lol. They tasted great, but looked rather goofy. I made the regular icing/syrup. Mmm. I’m wondering if this happened because I made my pancakes from scratch. I don’t typically buy pancake mix. Will make them again since they tasted great. Might try a mix next time. Thanks

  51. These were delicious!! learned quickly to make sure the squeeze tube has a pretty big opening. the one i used clogged up constantly and ended up exploding all over the griddle. other than that, these pancakes were very good 🙂

  58. Made these today for breakfest. It was such a hit!!! My dads not much of a regular frostibg eater *which i made with the pancakes* and he loved it! Such a hit in my house! Def will make again super easy too!
