Milk Chocolate Covered Raspberry Jellies

Have you ever been to the Oregon Coast? It’s my favorite place to go – summer or winter. We love everything about it. We hit our favorite places every time we go there: Cannon Beach Bakery, Bruce’s Candy Kitchen, the cookie store. You get the idea. For some reason the sweet tooth comes out when we’re close to the ocean. (I’m going to blame it on the ocean. Go with it.)

My absolute favorite candy to get at the candy store are the raspberry and orange jelly sticks (covered in milk chocolate.) They are like heaven in your mouth. I love the combination of flavors. This last time we went to the beach and I got my jelly sticks I was a little disappointed. The candy store expanded (and is now twice the size) which is nice, but the quality of the candy wasn’t as good and they are around $14 a pound. Ouch. So I started thinking, “I bet I can make these.” So I search the web and found a recipe that sounded great and went to work.

They were actually pretty easy to make.

Ingredients:
* 1.75 oz. box fruit pectin
* 3/4 cup water
* 1/4 tsp. baking soda
* 1 cup sugar
* 1 cup light corn syrup
* 1 1/2 tsp. raspberry flavoring
* red food coloring

In a small pan, combine pectin, water and baking soda and cook over high heat.

At the same time and in another larger pan, combine sugar and corn syrup. Bring to a constant, rolling boil.

Add pectin mixture and boil for 1 more minute, stirring constantly.

Remove from heat and add flavoring and food coloring. Stir.

Pour into a greased 8×8 glass pan.

Put on the counter and loosely cover with plastic wrap. Let sit overnight.


The next day, invert the pan onto a platter or plate covered in sugar. If it sticks to the pan, carefully loosen with a knife around the sides.

Cut into squares or strips and cover with sugar.


Let sit for an hour or so before you put into containers.


Of course I needed this covered in chocolate. I like just about everything covered in chocolate so this isn’t news, right?

We used Guittard Milk Chocolate A’Peels because I think this is the best candy making chocolate ever! And good chocolate is important!


Dip and set on wax paper to set.


I’ll still buy these when I go to the beach. It’s been a tradition for ages. But now I can make these at home (and they taste amazing!) I brought a little of the beach home. Yeah for me!

  12. These look great! I have never had this type of candy. Yikes, $14a pound. A similar thing happened to me when I went to buy fudge in Maine this summer. I was really surprised how pricey it was. I didn’t buy it; then later I wished I had…lol

  24. Greetings! I saw this posted on Pinterest. Oh, you have made me so happy! When I was little in Brooklyn, I would always get these in the candy store. I would get the “Joyva Jell Rings” or the Joyva Jelly Bars. When my son was little, I’d buy them for him. Then we moved to Conn. and I would send away for them on the internet, or sometimes I was lucky enough to find them in stores, not often though.   27. I have tried making these twice, both times they came out very gooey and it was impossible to even cut them. I believe that I followed the recipe as directed. Any idea what would cause this to happen? Thanks.

    • Absolutely! You can substitute any flavoring. I buy it from the candy making store and there is every flavor you can imagine. In the grocery store there are limited flavors but most carry raspberry and orange. They are by the vanilla. I hope you love them!
