Cinnamon Chip Oatmeal Cookies

Have you seen these before? I’ve heard of them but I haven’t ever seen them in the stores. But the other day my Mom brought me a bag and said “try these.” Okay! You don’t have to tell me twice!
 
I wasn’t quite sure what to make first.  The possibilities!  But there was a recipe on the bag for Oatmeal Cinnamon Chips Cookies.  It sounded pretty good so that’s what we made.
 
Oh mama!  When I cut open the bag I knew I was going to be in heaven.  They smelled wonderful!  All cinnamon-y and delicious!  Maybe my new favorite cookie =o)
 
Ingredients:
* 1 cup butter, softened
* 1 cup packed light brown sugar
* 1/3 cup sugar
* 2 eggs
* 1 1/2 tsp. vanilla
* 1 1/2 cups flour
* 1 tsp. baking soda
* 2 1/2 cups quick cooking oats
* 1 (10 ounce) package Hershey’s Cinnamon Chips
 
Preheat over to 350 degrees.
Beat butter and sugars in a bowl until creamy.  Add eggs and vanilla; beat well.  Combine flour and baking soda.  Add to butter mixture, beating well.  Stir in oats and cinnamon chips.
 
Drop by heaping teaspoons on ungreased cookie sheet and bake for 12 minutes or until lightly browned.  Let cool for about 1 minute and then remove from cookie sheet and let cool on wire rack.
 
 
Makes about 4 dozen.
 
They got a huge thumbs up by my kids.  Oh yeah, and by me!  They were fantastic: especially warm!
 
I’m on a hunt for more cinnamon chips now!  My freezer needs some of these in there for later =o)

  6. I found cinnamon chips last year and made these same cookies. They were SO good…definitely a new favorite. For some reason I can’t find cinnamon chips this year and I was beginning to think I wouldn’t be making these cookies again. But your post has given me hope that I will find them if I keep looking 🙂

  8. Erin, I have saved several recipes that call for these chips but have not yet found them in my local stores. I plan to look for them when I’m in a larger city. Glad to see they do exist!
