{Secret Recipe Club} Egg Shaped Brownies

I was so excited when I received my blog assignment for The Secret Recipe Club for March and read that it was That Skinny Chick Can Bake.  I’ve been following Lizzy’s blog for quite awhile now and absolutely love it.  I love all the amazing and creative desserts that she makes (that’s my weakness just in case you hadn’t realized that.)   And she has so many great ones!
And I could go on and on.  I wanted to make them all!
Lizzy’s Egg Shaped Brownies have been on my to do list ever since I first read her post back in November.  I thought they were so clever I knew that was the recipe I was going to make.  Hers turned out amazing and looked so professional.  Mine?  Well, not so much.  But they were definitely fun to make and the brownies recipe?  To die for!
Egg Shaped Brownies
* 7 ounces semi sweet chocolate, chopped
* 1 stick butter (1/2 cup) cut into 8 pieces
* 3 eggs
* 1 cup sugar
* 1 cup flour
* 1 tsp. vanilla
* pinch of salt
* 3 Tbsp. unsweetened cocoa powder
* 1 tsp. vanilla
12 – 16 egg shells
Powdered sugar (optional)
Vegetable oil
To prepare the egg shells, poke a hole in one end.  Make the hole big enough to get the egg out but not too big.  The easiest way we found was to poke a hole using a skewer.  Then we carefully broke off more of the shell to make the hole bigger.  Stir the egg up with the skewer and then dump it out.  (We found that stirring it up made the yolk come out a lot easier.)
Lizzy did this carefully so she could save the eggs.  Holy smokes.  That was super hard because all the little pieces of egg shell were going into the egg so we didn’t even bother to try to save them.

When the eggs are rinsed, soak them in a bowl of salt water for about 30 minutes.  Make sure that you hold down each egg to fill it with the salt water.  Rinse and turn upside down to dry.  We put ours upside down in a mini muffin pan to dry.
Put about a tsp. of vegetable oil in each egg shell and thoroughly coat the inside of the egg. Pour out excess. (I found that spraying the inside with non-stick cooking spray with flour and then shaking it up worked a little bit better. The brownies didn’t stick to the egg shell when I did this.
Preheat oven to 350 degrees.
Melt chocolate and butter together in the microwave in 30 second increments, stopping and stirring until smooth. Set aside to cool until warm.
In a medium bowl, whisk the eggs and sugar. Mix in vanilla and chocolate and mix until blended. Stir in flour, salt and cocoa powder just until combined.
Place eggs, hole side up, in mini muffin pans. Use a little bit of tin foil to make a “cup” at the bottom of the cup to keep the eggs upright.  FIll eggs about 3/4 full.  Make sure you wipe up any spills off of the outside of the egg shell.
This was the hard part.  My first batch I didn’t fill enough so the finished product was about 1/2 an egg shape.
My second batch was overfilled and they went everywhere.
Third time is a charm (kind of.)  They didn’t completely fill the egg and didn’t turn out as beautiful as Lizzy’s, but my kids thought they were really “neat”.  =o)
Bake for about 15 minutes.
Cool completely before “cracking”.
As easy as these look to make, they were harder than heck.  Who knew???  But the brownies are delicious!  I will make this recipe again, just maybe not in egg form =o)  Or maybe I’ll try it again….  who knows.  My son did say these would be fun to take in his lunch for April Fool’s Day.
They were pretty neat looking out of the shell too.
