Chocolate Pastel Mint Cookies

I saw these on Pinterest before Christmas and immediately pinned it. Don’t they look yummy? I just love, love, love those pastel mints. I have only seen them at the Pepperidge Farm stores but my co-worker tells me they are available in the store. But I’ve never seen them =o(

They were delicious!  I mean seriously – how can you go wrong with chocolate and mint, right?  And perfect for Easter (I thought.)
