Ben’s Pickled Eggs

What the heck, right? Who’s Ben and why would we want to make pickled eggs?! When I think of pickled eggs I think of old movies with a huge jar of nasty looking eggs on a bar counter top. Right? But I’m here to school you.
My co-worker and friend (thus the Ben) makes these delicious pickled eggs all the time! Don’t they look so cool? Kind of like lemons when you first look at them.  And they are so easy!
You will need:
* hard boiled eggs
* a jar of peperoncini juice (you can eat the peperoncinis)  =o)
That’s it!  Two ingredients!
Take the shells off of your hard boiled eggs.  (We love hard boiled eggs!)
Put them in the peperoncini jar, making sure the juice covers the eggs.
Put in the refrigerator for at least a couple of days.  The longer the better!
The eggs soak up the great yellow-green color of the juice and the delicious peperoncini flavors without the spicy hotness!  They are so good you can eat them whole, or cut some up and put them on a green salad.  And how good would they be in an egg salad sandwich?!

  5. Yes, I remember seeing those eggs at convenient stores and wondered if anyone actually bought those. Those things really did look gross and unsafe to eat.
