Cheesy Egg In A Bowl

 
My kids love breakfast foods. They’re constantly requesting scrambled eggs and hashbrowns or pancakes or waffles for dinner. And to be honest, I’d much rather have these foods for dinner than breakfast time. I don’t know why. But they taste so good in the evening!  So I have no issues with the “please Mom”!  =o)

I found this great recipe in the Spring issue of Kraft Foods Food & Family magazine.  I wasn’t sure if my kids would like them too much but I knew it was going to be a tasty treat for me!  And I was so right!  How can you go wrong with eggs, bacon and cheese?!  Not possible!

* 6 dinner rolls (3 1/2 inch)
* 12 slices of bacon, cooked
* 6 oz. Velveeta cheese (I used cheddar instead)
* 6 eggs (Egglands Best, of course)
Heat oven to 375 degrees.
Cut tops off of the rolls and set aside.  Make a 1 inch deep indentation in the center of the rolls.
Crumble 6 of the bacon slices and sprinkle into the bread bowls.  Top with cheese.  Crack an egg into each roll and place on a baking sheet.
Bake for 20 – 25 minutes or until egg whites are completely set and yolks begin to thicken.  (I cooked mine until the yolks were cooked because I don’t like runny eggs.)
Add the tops to the baking sheet (cut side up) for the last 5 minutes of baking.
Sprinkle with chives, if desired.
Serve with remaining bacon and fruit.
