Andes Mint Cookies

These have got to be the easiest cookies I’ve ever made! I loved it! And easy is only good when they are delicious to boot. And these were gooooood!  Even my co-workers asked for the recipe.  (Usually they just tell me to make some more.)

Andes Mint Cookies
* 1 box Devil’s Food Cake Mix
* 1/2 cup oil
* 2 eggs
* Andes mints
I know!  So simple, right?!?!
Mix cake mix, oil and eggs together.  I used my Pampered Chef medium scoop to scoop out balls of dough.  Place on a cookie sheet lined with parchment paper or a silpat.
Bake in a 350 degree oven for 6-9 minutes.  Don’t cook them for longer than that!  You don’t want them to be overdone!
Take the cookie sheet out of the oven and while the cookies are still hot, place an Andes mint on top of each cookie.
Let sit about 5 minutes until the mint is melted.  Take a knife or back of a spoon and swirl the chocolate on the top.
I told you they were simple!  And how cool looking all swirled like that!
Enjoy!  And try not to eat them all.  I dare you!

  10. I made these (check it out: http://heatskitchen.blogspot.com/2011/12/andes-mint-cookies.html) from scratch, but they’re pretty much the same recipe! I thought they got to be too sweet with the andes mint on top, so I mixed it in with the chocolate chips (in my recipe…you could melt it into the batter on yours) and they turned out AMAZING!

    • I always use my stand mixer because I’m too lazy to mix things by hand =o) You surely could though.
