One of the things I love about summer is going camping with my kids. We’ve been going for the past 5 summers and we just love it. It’s one of those “I am woman, hear me roar” types of moments for me. I’m a single Mom and have been since my kids were 1 and 3. I told myself back then that I was going to show my kids that I was capable of doing anything and therefore, they could be too. So we started camping.
We’ve gone to a couple of different camp grounds but we seem to gravitate to L.L. “Stub” Stewart State Park in Vernonia, Oregon. We camp in cabins or yurts. My kids want nothing to do with tents, so this limits our choices a little bit. L.L. Stub Stewart State Park is wonderful. It’s the one time of the year (or two or three depending on how many times we go up there) that we don’t have TV or electronics, my kids don’t fight and we hike and talk and play games with out the distraction of “life”. We go hiking.
And ride our scooters.
We make campfires and poke them until we can’t poke them any more =o)
We roast hot dogs and eat outdoors.
We roast marshmallows (because who can resist that?!)
And my kids play together and love on each other which makes this Mom happy!
Then on a camping trip on year we discovered Dough Boys. Oh lord, I can’t even begin to tell you how heavenly these bad boys are! They have become my kids favorite thing to make while camping. Yep, they even beat out s’mores! Can you believe it?!?! But look how delicious looking they are? All filled with chocolate and marshmallow goodness. Kind of like a s’more but totally pimped up!
This year I decided to do something different with our Dough Boys. I still brought chocolate bars and mini marshmallows and toffee bits. I couldn’t leave those out. But I also brought these:
Simple ingredients but look at the end result!
I don’t even know what to say about them. I’m speechless. That’s how awesome they were!

Roast the dough (cresent dough, of course) over the fire. Be patient! They take a little bit of time if you want them perfect.
Slide the dough off the stick and fill the hole and let it cool for just a little while. If you are filling with chocolate and marshmallows, you’ll want it warm so everything melts all together. But with pudding, let it cool just a bit. Now fill the hole with pudding and put a ton little frosting on top.
Voila! You have a campfire eclair.

I grew up making something almost like these when we camped … which was all summer long for us! We would come home for 2-3 days, just long enough to do laundry and restock the coolers, then hit the road again — but we used tents and port-a-potties.
We would use large wooden dowels (my dad was a carpenter) and wrap biscuit dough around the ends. If it was dinner, we’d stuff a hot dog inside. If it was dessert, we’d use pie filling!! Apple, peach, strawberry – didn’t matter. They were all good!

P.S. Erin, For the sticks, do you simply insert the smaller dowel, or do you secure it on with a screw?

Love this idea. How creative! My grandson loves “camping” in his backyard so they can make smores. I know he will love doing this, too. I can’t wait to try it myself. Then, you think of all the possibilities just with other flavors of pudding and frosting not to mention all the things you could use for filling.

Lots of great picture of everyone camping it sure looks like everyone in the family had a fun time. This is a good recipe. I never would have thought of it. Easy to make and we all will like them. Do while we toast our hot dogs on a stick. You probably could use different flavored marshmellows for a change of taste to – now I could eat some LOL

Me, my kids & their kids still have an annual camping trip to the Beach here in Texas & I can’t wait to make these for them….nope, scratch that…..makin them this Spring Break over the patio fire pit with my GB’s!

When our 5 kids were growing up including thru their teens when we’d travel on vacati0n each year the kids always begged and voted to camp wherever we were going even over staying at a nice hotel with pool. They loved camping, so we did it for them and we did have fun, but now that they are grown up on their own, Todd and I far prefer nice hotels.
HOWEVER those campfire eclairs look soooooo amazingly delicious, just the picture is making my mouth water. I wish I had that recipe when we use to camp I would have made those for SURE!

These eclairs look awesome@ I have never seen anything like it. You are right, I don’t think I could eat just one. I still look back on the memories I made with my children and now grandchildren. It is the simple things we remember most. Just tonight, I sat in the floor and played Monopoly with my ten year old grandson. We talked and laughed and he said he never remembered a game taking three days…and we haven’t finished it yet. We turned off the games, TV and distractions and just played a simple game and had such fun! I will be making these with my grandchildren soon!

Been making these for as long as I can remember but was taught they were called ‘Broomstick Pies’… because as the name indicates we used broomsticks to make them. Sanding, and seasoning a broomstick just right is an art! People will wait their turn to use ‘your’ stick if you are a master at sanding and seasoning!
When we were camping we would use a metal can nailed to a stick. wrap the dough around it and roast it on the campfire. They you can use it as you want ! We buttered the can first !
