Double Chocolate Snowball Cookies {Secret Recipe Club}

The Secret Recipe Club: A “Cooking Club” where participants are assigned a blog each month where they pick a recipe, bake/cook it and blog about it.

Mindy has a wonderful blog where she cooks up amazing International (and US) dishes.  Her blog is her journey.  And what a journey it is!  I fell in love with her blog immediately.  There were so many recipes I wanted to try:
But what did I pick?  A dessert, of course =o)
Double Chocolate Snowball Cookies
* 1 cup butter, softened
* 1 cup sugar
* 1 tsp. vanilla
* 1/2 cup cocoa powder
* 1 3/4 cup flour
* 1 cup nuts (chopped) – optional
* Chocolate chips
* powdered sugar
Cream together butter and sugar until light and fluffy.  Add vanilla.  Beat in flour and cocoa powder and mix well.  Add nuts.
Wrap dough in plastic wrap and refrigerate for 1 hour.

Scoop into 1 inch balls.  Add 3 chocolate chips into the center of the ball and form back into a ball.  Place on a cookie sheet lined with parchment paper.

Bake in a 400 degree oven for about 12 minutes.
Cool for only a couple of minutes on the pan and then roll in powdered sugar.  Place on a cooling rack to finish cooling.
You can roll these cookies twice in powdered sugar.  It helps keep the coating on the cookies.
The cookies were delicious.  They were really chocolatey but not very sweet so I liked the powdered sugar coating.
