Greek Salad and a Taste of Summer

I love summer time.  All the fresh veggies!  (I can do without the fruit, but the veggies I’m thrilled about.)  And tomatoes?  Fresh off the vine?  Pure heaven!

This Greek Salad is something I could eat everyday of the summer.  It’s light and crisp and totally delicious!

  8. The tomatoes are on, but a little sparse this year. I hope I get a lot more before frosts come. I am definitely going to try this. I love all of the ingredients. I usually think of using my tomatoes for salsa, so this is a great way to change things up. Thanks Erin
