Easy and Delicious Baked Churros

When your kids have other kids sleep over, how do you entertain them?  Our last big sleepover we made Baked Mini Donuts and I gave all the kids facials.  It was a hoot!  But how do you compete with that?  Well, with Churros and hair rollers of course!
Baked Churros

* 1 1/2 cups flour
* 1 tsp. baking powder
* 1/2 tsp. salt
* 1/4 tsp. cinnamon
* 1/4 tsp. nutmeg
* 1/2 cup sugar
* 3/4 cup butter, room temperature
* 1 egg
* 1/2 tsp. vanilla
* 1 cup milk
* 1/2 stick butter, melted
* 1/2 cup sugar
* 1 1/2 tsp. cinnamon
 Preheat oven to 350 degrees.
In a stand mixer, blend butter and sugar until fluffy (about 2-3 minutes.)  Add egg and vanilla and mix well.
In a separate bowl, combine flour, baking powder, cinnamon and nutmeg.
Slowly add flour and milk to butter mixture (alternating and ending with the flour.)  Your dough will be thick and sticky.  But can you see the cinnamon and nutmeg?  Yum.
Use a medium scooper to scoop balls of dough on a baking sheet lined with parchment paper.
Bake for 15-18 minutes or until edges are golden brown.  They look like cookies.
Let sit for about a minute on the cookie sheet and then dip each churro in the melted butter and cinnamon and sugar mixture.
Mickey dipped hers in melted chocolate fudge but my kids requested maple frosting.  (They always request maple frosting.)
I think they liked them!
