S’more Pie Roll Up Cookies, A Virtual Cookie Swap & A Giveaway

I love cookie swaps, don’t you?  They remind me of Christmas, which is my favorite holiday EVER.  And who doesn’t love cookies?  (If you don’t, don’t answer that.  We might not be able to be friends.)

This is a little different type of cookie exchange.  You don’t have to bake (but you also don’t get to go home with a boat load of treats.  That’s the bad part.)  But everyone participating today is posting a great cookie recipe along with the giveaway.  It’s like a cookbook of cookie recipes, with pictures, right here for you.  Jackpot! 

And are you ready for this cookie recipe?  It’s the mother of all cookie recipes!  It’s easy, not many ingredients and DELICIOUS!  All of my favorite things for a cookie =o)If you haven’t guessed by now, I am a HUGE s’more fan.  I love the combination of marshmallow, milk chocolate and graham cracker.  We’ve made a lot of different s’more variations.  We’ve done:

I told you we loved s’mores!

This idea came after we made our Mini S’more Hand Pies.  I had some extra pie crust and didn’t want to toss it out.  Seriously!  That would be like throwing away gold.  I love pie crust!

S’more Roll Up Cookies

* pie crust
* 1/2 cup marshmallow cream
* 2 Tbsp. cream cheese, softened
* 2 Tbsp. sugar
* 1/2 cup milk chocolate chips
* 1/2 cup crushed graham cracker crumbs

Roll out your pie crust.  We just used the store bought kind because I don’t know how to make pie crust =o)  Cut it into rectangles about 1 1/2 inches wide by 4 or 5 inches long.  (It’s totally up to you based on how fat you want them to be.

Mix the marshmallow cream, cream cheese and sugar together.  Spread over pie crust rectangles.  Sprinkle with chocolate chips and roll up.

Sprinkle one side with the graham cracker crumbs and bake in a 425 degree oven for about 6 – 10 minutes.  Again, this depends on how big you make them.  You want them slightly golden brown.

They are delicious and gooey and perfect!
