Carrot Cake Oatmeal Cookies with Carrot Cake M&Ms

Who knew they made Carrot Cake M&Ms.  No, that’s not a question.  That’s a statement.  Who knew!   I saw them over on Inside BruCrew Life and was intrigued.  I say intrigued because I wasn’t totally sold on them right away.  I mean seriously.  Carrot Cake M&Ms?  If you know me at all you know about my aversion to mixing desserts and vegetables.  It’s just not right in the dessert scheme of things in my book. 
Over on Cookin’ Cowgirl I saw her recipe for Carrot Cake Cookies using the same M&Ms.  Again, intrigued but a little scared.  Vegetables… IN desserts!  I’m not quite sure.
So I took it slow.  You know, ease in a little.  None of this “taking the leap” stuff for me.  So I kind of revised the idea a little.  I used my all time favorite Oatmeal Cookie Recipe (found on the lid of the Quaker Oats box) and added a little to it.  So here’s what I came up with.
Carrot Cake Oatmeal Cookies
Revised (a little) from Quaker
* 1/2 cup plus 6 Tbsp. butter, softened
* 3/4 cup packed brown sugar
* 1/2 cup sugar
* 2 eggs
* 1 tsp. vanilla
* 1 3/4 cup flour
* 1 tsp. baking soda
* 1 tsp. ground cinnamon
* 3 cups oats (quick or old fashioned, uncooked)
* 3/4 cup shredded carrots
* 1 bag Carrot Cake M&Ms
Preheat oven to 350 degrees.
In a large bowl, beat butter and sugars until creamy.  Add eggs and vanilla and beat well.  Add combined flour, baking soda and cinnamon; mix well.
I grated my carrots pretty small.  I didn’t want giant chunks in the cookies =o)
Add oats and carrots and mix well.  Add M&Ms.
I used my medium cookie scoop to drop dough onto a Silpat (or cookie sheet lined with parchment paper).  Bake for 8 – 10 minutes.
Cool for about a minute and then transfer to a cooling rack.
They don’t have a big carrot flavor, which is good in my book.  And I dont’ really know what carrot cake tastes like, since I don’t eat it.  I know.  Don’t judge.  But these cookies were wonderful.  The Carrot Cake M&Ms are strange tasting, but good.  Strange because when I first ate one I couldn’t quite figure out what it tasted like.  But again, I don’t eat carrot cake, so maybe that’s exactly what they taste like.  But they are fun and different, and I’m all about fun and different.  And cookies.  SO there you go.  Carrot Cake Oatmeal Cookies with Carrot Cake M&Ms.

  2. I saw the Carrot Cake M&M’s at Walmart but I just couldn’t buy them. I do like carrot cake, I do like M&M’s and I do like white chocolate.
    I resisted because I was afraid I just might eat the entire bag! But you have convinced me. Your recipe looks perfect. So I’m off to Wally’s first thing in the AM!
