Biscoff Sock-It-To-Me Pound Cake

We are HUGE pound cake fans.  What’s not to love, right?  So when I saw this recipe, it immediately caught my eye.  We love Biscoff too.  (Again, what’s not to love?)  But I wasn’t quite sure what a Sock-It-To-Me cake was. From what I read, it’s a cinnamon Bundt cake made from a cake mixBut this recipe isn’t from a box and adds a little more sour cream pound cake flair to the Southern Treat.  Now add Biscoff.  Holy smokes, right?!?!
Biscoff Sock-It-To-Me Pound Cake
* 2 sticks ( 1 cup) unsalted butter, softened
* 2 3/4 cups sugar
* 3 cups cake flour (if you don’t have cake flour you can substitute with 3/4 cup corn starch and 2 1/4 cup AP flour)
* 1/4 tsp. baking soda
* 1/2 tsp. salt
* 6 eggs
* 1/2 cup sour cream
* 1/2 cup + 2 Tbsp. Biscoff Spread
* 2 tsp. vanilla
Cinnamon Filling
* 1 1/2 tsp. cinnamon
* 1/4 cup brown sugar
Biscoff Glaze
* 2 cups powdered sugar
* 1/2 cup Biscoff Spread
* 1/2 tsp. vanilla
* milk (about 7 Tbsp. but this varies depending on how thick you want it)
Preheat oven to 325 degrees.
Grease and flour a 12 cup Bundt pan.
In a stand mixer, mix butter and sugar and beat until smooth and creamy.  Add eggs, one at a time, beating after each one.
In a separate bowl, sift flour, baking soda and salt (and cornstarch if you aren’t using cake flour.).
Add a third of the flour mixture and mix.  Add sour cream and mix, then another third of the flour mixture and mix.  Add Biscoff spread and mix.  Finally add last of the flour mixture and mix.  Add vanilla.
Add half of the batter to your prepared Bundt pan.
Combine the cinnamon and brown sugar to make the filling and sprinkle over the batter.
Cover with the remaining batter.
Bake for about an hour and 10 minutes or until a toothpick inserted in the center comes out clean.
Cool for about 10 minutes in the pan and then invert on a wire rack.  Cool completely before frosting.
To make the frosting – combine all of the frosting ingredients (except milk) and mix with a mixer.  Slowly add milk, one tablespoon at a time until it is the consistency you want.  You want it thin enough to pour over the top but not so thin it all drips off.  (Does that make sense?)
This is now one of my go to desserts for us.  We all loved it!  It was moist and cinnamon-y and the Biscoff added an almost caramel/cinnamon flavor to it that was to die for!

My apologies for not explaining what Biscoff is.  It is like peanut butter but rather than using peanuts it’s made from cookies.  Yep, cookie butter.  Doesn’t that sound like pure heaven!  So if you haven’t tried it, I seriously recommend you go find it and buy it.  It’s located in the peanut butter aisle at the grocery store.

  8. Usually I’m very ho-hum about pound cakes, but this one looks so good! I think because it includes all that cinnamon-y layers and the oh-so-rich Biscoff icing on top! Definitely not your average pound cake for sure. Thanks for sharing the recipe! I have no idea what a Sock It to Me cake is, but I will be enjoying this regardless!

  25. For those who don’t know what Biscoff it – first, you need to go buy some ASAP! It’s amazing. It is like peanut butter but instead of ground up peanuts, it’s ground up cookies. Yep, cookie butter!

    One of the best cakes I’ve ever made! I did have a few small problems though. I greased and floured the pan extremely well, but for some reason all the brown sugar/cinnamon gravitated to the sides of the pan. Because of this it caramelized and stuck to the pan almost all the way around. Any suggestions for next time I make it because I’ll definitely be making it again!

    • Oh man, I’m so sorry. I use the non-stick spray with flour already in it. It’s amazing and I’m serious when I say, nothing ever sticks! I’ve also loved my silicon pans. Nothing ever sticks to those too. Other than that, I’m not sure. Maybe try to add most of the filling in the middle and away from the sides?

      I’m glad you like it, tho. We thought it was to die for!

    I see you cut the sugar in your recipe, you use 22/3 cups of sugar, while cindy uses 23/4 cups of sugar.
