Ranch BLT Pasta Salad

I love pasta salad but for some reason I don’t make it nearly as much as I should. (Or would like.)  I’m not sure why because it’s so easy and perfect to have in the fridge.  I can take a bowl of it to work for lunch and as is right in the world.  =o)

This pasta salad recipe is an easy one to make and it’s wonderful!  The crunchy-ness of the lettuce and the tomatoes and bacon add so much flavor and texture.  This might be one of my new favorite pasta salads!

Ranch BLT Pasta Salad
* 8 ounces pasta – we chose bow tie pasta but any pasta will work
* 1 bottle Ranch Salad Dressing
* 1 1/2 cup diced tomatoes, seeds removed
* 1 cup cubed Swiss cheese
* 1/2 cup thinly sliced red onions
* 1 pound bacon, cooked crispy and chopped
* 2 cups finely chopped romaine or iceberg lettuce
* salt and pepper, to taste

Cook the pasta according to package directions to al dente.  You don’t want mushy pasta!

Drain pasta, toss with dressing to lightly coat so they don’t stick together and refrigerate until cold.

In a large bowl toss the cold pasta with the tomatoes, Swiss, onions, bacon and lettuce.

Add enough dressing to generously coat everything and season to taste with salt and pepper. 
 I ate it for breakfast.  Is that bad?  But it was so darn tasty!

  5. Wow, this is the best pasta salad ever!!!! Thank you so much for putting some in my fridge so I had something to eat when I got home from the airport. Paris food was wonderful but this tasted better than any of it. The ingredients are on my grocery list. Yummmmmm.
