Spring Burst Cake Mix Cookies

These just scream Easter to me.  I love the colors!  And I’m so ready for spring.  That means the school year is getting closer, which means summer time.  I know.  How can I already be counting down the days until summer?  Nine weeks people!  Nine weeks!  Then I’m off for 2 months.  Oh, boy.  I can hardly wait!

But back to these cookies.  They were delicious!  And made with a cake mix.  So darn simple.

Make sure you use a white cake mix so the cookies aren’t yellow.  (Unless you want them yellow, of course.)

You can use a spring “chocolate chips” but I had a couple of things of these – Nestle Toll House Mini Toppers.  Yum!

Spring Burst Cake Mix Cookies

Ingredients

  • 1 box White Cake Mix {16.25 oz.}
  • 1 bag Nestle Toll House Springtime Morsels or 1 1/2 cups of the mini morsels I used
  • 2 Egg Whites
  • 1/2 cup Canola Oil or Vegetable Oil

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine cake mix, egg whites, and oil in large mixing bowl, and beat well.
  3. Stir in yellow and pink Nestle morsels with large spoon.
  4. Chill dough in refrigerator for 1 hour.
  5. Drop onto cookie sheet lined with parchment paper in rounded balls.
  6. Bake for approx. 8 – 9 minutes {or until done}
  7. Cool on cooling racks, and ENJOY!!

  2. I’ll take cookies any way I can get ’em…adding ‘pretty’ to the mix puts these over the top. They just make me smile…and drool too. Great idea!
