Slow Cooker (Crock Pot) Chicken Alfredo

Is it a crock pot or a slow cooker?  I’ve always called it a crock pot but I see recipes all over the web that say slow cooker.  Please, someone, educate me.

Regardless what it’s called, I love cooking in it.  And now that school has started and I’m back to work, it sure makes cooking dinner simple.

And who doesn’t love Chicken Alfredo?  I might be able to eat it everyday.  Seriously.  It’s one of those comfort foods that I love.  Chicken, Shrimp, Broccoli, it doesn’t matter what’s in it.  I love the creamy, cheesy sauce poured over noodles. 

I was pretty excited to try this recipe but a little nervous about pasta in a crock pot.   But I wanted to give it a try.

Slow Cooker (Crock Pot) Chicken Alfredo

Slow Cooker Chicken Alfredo

Ingredients

  • 2 large chicken breasts, about 1 pound total
  • 1 1/2 cups of heavy cream
  • 2 cups of low sodium chicken broth
  • 2 tablespoons of olive oil
  • 2 cups of finely shredded parmesan cheese, 4 oz
  • 1/2 pound of uncooked penne pasta, about 2 1/2 cups measured
  • 1/4 to 1/2 a cup of hot water
  • salt and black pepper

Instructions

  1. Add chicken breasts, heavy cream, chicken broth, olive oil and one teaspoon of salt to slow cooker.
  2. Cook on low for about four hours, until chicken has reached 165 degrees.
  3. Remove chicken from slow cooker and set aside to cool and shred.
  4. Stir in 1/4 cup of hot water and penne pasta, cover and cook on high for about 30 minutes. Just until pasta is tender.
  5. Once pasta is tender, stir in parmesan cheese, shredded chicken and additional salt and black pepper to taste.
  6. Thin sauce with additional hot water, only if needed.
  7. Enjoy!

This recipe had a great taste and I liked the chicken and sauce, but the noodles were horrible!  I’ve never cooked pasta in a slow cooker before and now I know why.  They were strange tasting, very pasty tasting and so not good.  Ugh.  So my advice, definitely skip the pasta step.  Just cook the pasta separately and scoop the chicken and alfredo sauce over the noodles.  That would be so much better.

Any tips for me on how to cook pasta in a crock pot?  Did I do something wrong or is this what typically happens?
