Arroz Chaufa - Peruvian Fried Rice with Shrimp and Chicken

It’s been five months since we’ve been in Peru.  I miss it.  I miss the people.  I miss the adorable children at the orphanage.  I miss the sights and the sounds and I miss the food!  I really miss the food.  I miss the Aji de Gallina, the Chicha Morada and the delicious Alfajores (among so many other things!)  And Chaufa?  Yes, please!

Arroz Chaufa is the Peruvian version of Chinese Fried Rice.  It’s easy to make and oh, so delicious.  Add in every kind of seafood you can think of and that’s what I had when we were in Arequipa.

Arroz Chaufa - Peruvian Fried Rice with Chicken and Shrimp

Arroz Chaufa {Peruvian Food}

Ingredients

  • 1 large chicken breast
  • large shrimp
  • 4 cloves garlic
  • 1/3 large onion
  • 1 1/2 tsp cumin
  • 2 square inches ginger root
  • 3 cubes chicken bouillon
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • Soy sauce
  • 1-2 small carrots
  • 1/3 cup frozen peas
  • 4 cups cooked rice
  • 2 eggs

Instructions

  1. Cook your rice and set aside.
  2. Cut the chicken breast into bite size pieces. Mince garlic and ginger root. Cut up onion into small pieces. Cook chicken, garlic, ginger and onion on the stove in a large pan, along with cumin, chicken bouillon, salt and pepper. Add a small amount of soy sauce.
  3. I grated the carrots to make smaller pieces.
  4. Add the carrots and peas and stir.
  5. Add the cooked shrimp and stir.
  6. Add cooked rice to the mixture. Stir everything together. Add a little more soy sauce to flavor. Ideally, you want some soy sauce flavor, but not too much (so that you can taste all the other distinct flavors).
  7. Scramble the eggs in a separate pan and then add to rice mixture.
  8. You can garnish with green onions if you like,
  9. Serve and enjoy!
