Oh yes I did! We took camping desserts to a whole new level this time.
If you missed our post on Campfire Desserts you have to check it out. Seriously! It’s a must. It’s kinda what camping is all about. Well, that and nature, of course. But mostly delicious desserts cooked over the campfire.
We have made Sopapilla Cheesecake before and I absolutely love it. The cinnamony cream cheese filling between to layers of flaky cresent dough? Oh man, it’s Pillsbury heaven.
I made the Sopapilla Cheesecake filling at home and brought it with us when we went camping. I’m all about making life easier when we go camping. I see all the other campers washing dishes and cooking for hours and I kinda feel sorry for them. They’re missing out on the relaxing and exploring and the sitting.
You’ll need pie irons to make this dessert. If you don’t have them, you seriously need to buy them. You’ll thank me. I promise!
Line one of the pie irons with cresent dough. Add a lot of the cheesecake filling. The more the better. Cover it with another layer of cresent dough and then cook over the campfire. Don’t put them directly in the fire, they’ll cook too quickly and burn. Turn about ever 3-5 minutes, depending on how hot your fire is. You can open the pie iron and check on them. When they are golden brown, they’re done.
You can spread on some cream cheese frosting and sprinkle with cinnamon and sugar. Oh yeah! You’ll want to do that!
They are delicious and your camping neighbors are going to be so envious!
