These easy and delicious Sugar Wafer Pencil Cookies are a perfect “Welcome Back” treat for your kid’s teachers.
When I saw this post I knew I had to make these Pencil Cookies. They are adorable!
Has school started for you and your kids yet? We still have a few weeks before school starts. I go back this week. Ugh! I know parents are all excited to send their kids back to school but that also means I have to go back to work. I kind of like my summers. Going back to work is tough. I think we should be able to ease back into the school year – two days the first week, three days the second week and so forth. You know, like with exercise. You don’t go balls out right away, you’ll pull something. That’s why we always give teachers a back to school treat. A thank you for coming back to work.
These cookies are so easy to make.
Cut one end of the Wafer Cookies to make the pencil lead point.
Dip the square end of the cookies into the pink candy coating.
You might want to cut the “tip” of the point off so that a chocolate chip can stick to the end of the cookie (like the lead).
Dip the pointy ends of the cookies into the while chocolate. Immediately place a chocolate chip on the end and place on waxed paper to cool.

Ingredients
- Sugar Wafer Cookies
- White chocolate chips or candy melts
- Pink candy melts
- Chocolate chips
Instructions
- Cut one end of the wafers into a point. Place on waxed paper.
- Slowly melt the pink candy melts in the microwave. Heat for 30 seconds and then stir. Heat for another 30 seconds and stir until completely melted and smooth.
- Dip the square end of the cookies in the pink chocolate. Place on waxed paper until it hardens.
- Slowly melt the white chocolate.
- Dip the pointy end of the cookie in the white chocolate. When wet, place a chocolate chip on the end.
- Place on waxed paper until hardened.
- Enjoy!
