Andes Mint Cookies
June 7, 2012 by Erin
These have got to be the easiest cookies I’ve ever made! I loved it! And easy is only good when they are delicious to boot. And these were gooooood! Even my co-workers asked for the recipe. (Usually they just tell me to make some more.)
A huge thank you to Six Sister’s Stuff for this delicious recipe!
Andes Mint Cookies
Source: Six Sister’s Stuff
* 1 box Devil’s Food Cake Mix
* 1/2 cup oil
* 2 eggs
* Andes mints
I know! So simple, right?!?!
Mix cake mix, oil and eggs together. I used my Pampered Chef medium scoop to scoop out balls of dough. Place on a cookie sheet lined with parchment paper or a silpat.
Bake in a 350 degree oven for 6-9 minutes. Don’t cook them for longer than that! You don’t want them to be overdone!
Take the cookie sheet out of the oven and while the cookies are still hot, place an Andes mint on top of each cookie.
Let sit about 5 minutes until the mint is melted. Take a knife or back of a spoon and swirl the chocolate on the top.
I told you they were simple! And how cool looking all swirled like that!
Enjoy! And try not to eat them all. I dare you!
I’m linking to the parties on my sidebar.
Hmm these look seriously delicious! I love the look of the melty Andes on top – I wish I could get my hands on one of them! Thanks for sharing the recipe and idea 🙂
Yummy. Ellie looks like she is really thinking it over…”let’s see, which one is the biggest!” LOL.
oh yeah! Those look great! And I can see using all sorts of candy!
I’m definitely going to have to bookmark this recipe and try it sometime! I already make another Andes Mint cookie, but these ones look good too!
Yum. And also, this possibly be the most useful site for a mommy like me ever!

I made these (check it out: http://heatskitchen.blogspot.com/2011/12/andes-mint-cookies.html) from scratch, but they’re pretty much the same recipe! I thought they got to be too sweet with the andes mint on top, so I mixed it in with the chocolate chips (in my recipe…you could melt it into the batter on yours) and they turned out AMAZING!
Look delicious. I love making recipes from a box mix. What a creative way to cook with an Andies mint. MMM. thanks for sharing .
My grandsons will love these. I’m SO THANKFUL I’m not a mint fan right now… otherwise I’d be in big trouble!
I love chocolate mint anything, so these cookies look great to me! Bet your family loved them too. Thanks for sharing your recipe at Your Cozy Home Party this week.

These look amazing! Who doesn’t like Andes .. A great choice for the holidays…
do you mix the ingredients by hand or with an electric mixer?
I always use my stand mixer because I’m too lazy to mix things by hand =o) You surely could though.
