Oatmeal Blueberry Muffin Cookies with Better Oats

I love blueberry muffins. And I love oatmeal cookies. So why not combine the two and make Oatmeal Blueberry Muffin Cookies! They were soft and moist and had the best cinnamon-y and blueberry flavor to them. A huge hit in my house.

Oatmeal Blueberry Muffin Cookies
Recipe Adapted from here
* 1/2 cup butter, softened (1 stick)
* 3/4 cup packed brown sugar
* 1/2 cup sugar
* 2 eggs
* 1 tsp. vanilla
* 1 1/2 cups all purpose flour
* 1 tsp. baking soda
* 1 tsp. ground cinnamon
* 1/2 tsp. salt (optional)
* 1 box (5 pouches) Better Oats Mmmm Muffins Blueberry Muffin Old Fashioned Oatmeal with Flax
* 2 pouches
Preheat oven to 350 degrees.
In a large bowl, beat butter and sugars on medium speed until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats.
Look at how amazing these oats look. See the blueberries in there? YUM!
Drop by rounded tablespoons onto cookie sheet lined with parchment paper.
Bake for 8-10 minutes. Let sit for about 1 minutes and then transfer to a wire rack to cool.
The cookies were wonderful! They had a great cinnamon and blueberry taste to them, just like an oatmeal blueberry muffin. My kids LOVED them!

These look so delicious! I’m a vegetarian so I feel like I don’t get as many omega 3’s as I should. Glad that the oats include them.
