My kids and I are counting down the days. Not until summer break, but until we leave for Peru. We’re heading to Peru to go volunteer for 6 weeks in an orphanage near Cuzco. We are so excited I can’t even tell you. Interested in reading about our story? You can find it here.
Until then, we’re baking away to try to earn money for our trip. And this was a perfect one to take to work to sell. Triple Chocolate Chip Cookies!
My Secret Recipe Club assignment this month was Dancing Veggies. Amanda started cooking in high school when she wanted to start eating healthier. She’s been cooking ever since and her blog is her outlet for sharing these healthy recipes.
This is definitely a more healthy cookie recipe that I’m used to making. (I know, don’t judge.) But oh so delicious!
Ingredients
- 2 1/4 cups all purpose flour
- 3/4 tsp baking soda
- 1 stick unsalted butter
- 1/3 cup brown sugar
- 1/3 cup applesauce
- 1 1/2 tbsp cold water
- 1 tbsp chocolate powder
- 1/2 cup white chocolate chips
- 1/2 cup milk chocolate/semi-sweet chips
Instructions
- Preheat oven to 350 degrees.
- In a bowl, mix flour and baking soda. Set aside.
- In a mixing bowl, cream the butter and sugar until fluffy.
- Add applesauce and mix well.
- Slowly add about half of the flour mixture and mix well. Add the water and chocolate powder and mix well. Add in remaining flour mixture and mix until well blended.
- Gently fold in the chocolate chips.
- Drop by spoonfuls onto a parchament lined baking sheet and bake for 11 - 13.
Who cares if they’re healthy! Those look delicious, and are a great SRC pick!
They look incredibly delicious. I love the crackled top.
This is my kind of cookie!!
Erin, As long as they have chocolate, I can forgive the applesauce. I won’t judge you if you’ll give me a cookie:)
Erin you guys must be getting SO excited for your trip!!
Delicious looking cookies you baked up – no fooling around when there are 3 different kinds of chocolate in this cookie 🙂
Wow – have a wonderful time in Peru – that’s so exciting!
