Hot Chocolate Cookies with Marshmallow Bits
December 14, 2012 by Erin
What screams winter better than hot chocolate?!?! We are huge hot chocolate fans in my house so these seemed like the perfect cookies to make. Not too chocolatey and with the best little marshmallow bits in them!
I got the recipe off of the jar of Kraft Jet-Puffed Mallow Bits. Oh man. They taste like the marshmallows in Lucky Charms cereal: a little crunchy and deliciously sweet. Perfect, in other words =o)
Hot Chocolate Cookies
* 1 1/4 cups butter, softened
* 1 cup sugar
* 2/3 cup packed brown sugar
* 2 eggs
* 1 tsp. vanilla
* 3 1/4 cup flour
* 4 packages instant hot cocoa mix (do not use sugar free)
* 1 1/4 tsp. baking soda
* 1 tsp. baking powder
* 1 cup chocolate chips (I used milk chocolate)
* 1 cup Jet-Puffed Mallow Bits
Heat over to 350 degrees.
Beat butter and sugars in large mixing bowl until light and fluffy. Add eggs and vanilla; mix well. Combine next 4 ingredients in a separate bowl and then gradually add to the butter mixture until blended. Stir in chocolate chips and mallow bits.
Drop 2 Tbsp. dough onto sheet lined with parchment paper. I pressed the tops down a little and added more Mallow Bits on the top (because you can’t have to many of these bad boys!)
Bake for 9 to 11 minutes or until edges are lightly browned. Cool on the baking sheets for about 5 minutes and then transfer to a wire rack to cool.
They definitely passed the test with my daughter and her friend. Can you see their faces very good? Notice the lip stick! Yikes.
Good golly! This is what they looked like when they came downstairs to show me their make up. They are like two little old ladies!
But they loved the cookies =o)
Enjoy!
