School has started which means I’m back to work again. I was kind of ready to go back to work but dreading the whole morning routine thing. The scramble each morning to make lunches, get the kids fed and dressed and all of us out the door by 7am. It’s my least favorite part of the day. Well, that and homework time. That’s always a joy too.
Anyways… we’re still not in the habit of eating breakfast so early in the morning. It’s usually around 30 minutes after I get to work that my I want breakfast and then what do you do? Oh sure, I could go through the drive thru and get breakfast, but if I ate fast food for breakfast every morning I’d be not only broke, but not happy that none of my clothes fit me. So that’s not an option. Then I saw a recipe for Granola Bites on Pinterest and I went and checked it out. It looked fairly healthy and sounded delicious. So I looked around some more to see if I could find a healthier recipe that still had lots of flavor so my kids would eat them.
I found two recipes that looked good. One recipe from The Kitchen is my Playground that has wheat germ and flax seed in it and one recipe from A Kitchen Addiction who made them into s’mores. I liked the idea of healthy and you can never go wrong with anything s’more!
I combined the two recipes and added some whey protein to them as well because my kids aren’t big meat or cheese eaters (I know! What the heck?!) And voila! Our version of Peanut Butter S’more Granola Energy Bites.
These little bites (I call the energy balls) are wonderful! I was a little worried that they would taste too healthy and my kids wouldn’t like them. They are perfect. They taste like a treat with the mini chocolate chips and marshmallow bites in them and I know they are packed with protein and fiber and other healthy essentials.

It didn’t take long to devour them! I’m going to make them again this weekend but add a little more protein powder to them.
Perfect for breakfast, lunch or a healthy snack that’s not packed with sugar.
Ingredients
- 1 1/2 cup old fashioned oats
- 1 cup peanut butter
- 1/3 cup honey
- 1/2 cup crushed graham crackers
- 1/4 cup ground flax seed
- 1/4 cup wheat germ
- 1/4 cup whey protein
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1/2 cup marshmallow bits
- 1/2 cup mini chocolate chips
Instructions
- Mix everything but the marshmallow bits and chocolate chips until blended. If it feels too sticky, add more oats. If it feels too dry and crumbly, add more peanut butter or honey.
- Stir in marshmallow bits and chocolate chips.
- Roll into 1 inch balls.
- Store in an air tight container in the refrigerator for up to 1 week.
