These just scream Easter to me. I love the colors! And I’m so ready for spring. That means the school year is getting closer, which means summer time. I know. How can I already be counting down the days until summer? Nine weeks people! Nine weeks! Then I’m off for 2 months. Oh, boy. I can hardly wait!
But back to these cookies. They were delicious! And made with a cake mix. So darn simple.
Make sure you use a white cake mix so the cookies aren’t yellow. (Unless you want them yellow, of course.)
You can use a spring “chocolate chips” but I had a couple of things of these – Nestle Toll House Mini Toppers. Yum!

Ingredients
- 1 box White Cake Mix {16.25 oz.}
- 1 bag Nestle Toll House Springtime Morsels or 1 1/2 cups of the mini morsels I used
- 2 Egg Whites
- 1/2 cup Canola Oil or Vegetable Oil
Instructions
- Preheat oven to 350 degrees.
- Combine cake mix, egg whites, and oil in large mixing bowl, and beat well.
- Stir in yellow and pink Nestle morsels with large spoon.
- Chill dough in refrigerator for 1 hour.
- Drop onto cookie sheet lined with parchment paper in rounded balls.
- Bake for approx. 8 – 9 minutes {or until done}
- Cool on cooling racks, and ENJOY!!

I’ll take cookies any way I can get ’em…adding ‘pretty’ to the mix puts these over the top. They just make me smile…and drool too. Great idea!
