A Little Taste of Summer


I’m beginning to get a little tired of the rain around here. It’s May for heaven’s sake and it’s pouring outside. I want summer! I want to be able to open up my windows and smell the fresh air. I want to wear sandals and capris and not feel like I’m frozen. I want to eat ice cream and have picnics and play outside with my kids!

Watermelon reminds me of summer. Eating it outside in the backyard, the juice running down your chin and spitting the seeds in the grass. But apparently it’s not yet watermelon season so we had to come up with our own version of a watermelon. (And what better than cookies?!?!)

These cookies are tasty. They look like they should just taste like a typical sugar cookie but when you bite into them it’s a surprisingly delicious treat.

What you will need:

3/4 cup butter (room temperature)
1/2 cup sugar
1 package (3 oz.) watermelon flavored gelatin
1 egg
red food coloring
1 3/4 cup all purpose flour
1/2 teaspoon baking powder
1/3 cups miniature chocolate chips
green sugar

Cream together the butter, sugar and gelatin powder until fluffy. Add the egg and beat until smooth. Mix in about 8 drops of food coloring. Stir in the flour and baking powder. Blend well. Stir in the chocolate chips.


Divide the dough in half and shape into a log about 5 inches long. Wrap in wax paper and refrigerate for 2 hours.

Preheat the oven to 350 degrees.

Pour the green sugar onto a plate or pie pan. Roll each log in it. Cut the dough into slices about 1/4 inch thick, then cut each slice in half. Place on a baking sheet about 1 1/2 inches apart.


Bake for 8 to 10 minutes, just until firm. Cool for 3 minutes, then transfer onto a cooling rack. Cool completely.


Enjoy!

The gelatin powder adds so much flavor to these! They taste delicious and look (at least to me) like summer.

  32. These are super cute! I tried to make them, but had a lot of trouble shaping them to look like that! How exactly do you roll the dough into such a neatly formed oval? And when I cut the slices from my totally unperfect oval-ish bump, they smushed up, so it wasn’t worth cutting them in half from there. They also spread out a lot while baking…and definitely don’t look like watermelon slices lol… still taste great! But any suggestions?? I did put the dough in the fridge for a while…

  33. Hi Lindsy – You HAVE to refrigerate the dough for at least 2 hours. Then it won’t mush at all when you cut it. (Sometimes I dip my sharp knife in flour to help it not stick) but it shouldn’t on this recipe.
